“Summer Blog-Lite”

“Eating and reading are two pleasures that combine admirably.”—C.S. Lewis

Hi Blog Readers—

I don’t know about you, but during the summer I tend to cook less…and here in Sun Valley, especially so—“So many restaurants, so little time!”

But I did indeed prepare a Boursin Cheese-Cherry Tomato Pasta dish the other night that a friend (Cosi’s other mother) had made for us earlier this summer.   It was simple, it looked colorful, and it tasted great.

There are many on-line variations of the recipe, but the Baked Boursin and Tomato Pasta Recipe on the Boursin website (Boursin.com)  is a good starting point. I did do the optional spinach add-on, and also put in some sliced zucchini.  I served it with a Romaine /arugula/avocado salad, and a rosé wine from the Veneto region of Italy. . And for dessert?  Why not…

                          …found at a local shop!

Along with lite-fare cooking for the summer, I also like lite-fare reading, so I often visit the Community Library in Ketchum and just lollygag around.  It is a town treasure.  Last week I went to the children’s library section and smiled my way around the bookshelves.  The two-book combo I checked out and love are:

Just What to Do, by Kyle Lukoff, illustrated by Hala Tahboub, is a sweet story about how to help a friend who’s sad.

The other, Sometimes All I Need is Me by Juliana Perdomo, offers ways to comfort and center oneself.

After I checked out these books, I popped right around the corner to the Gold Mine, a thrift store whose entire profits go to support the library.  While there, a friend bought me the $1 polka-dot plate pictured above… so nice.

And so, dear readers, may the remaining weeks of summer bring you all good things.🌼🎈❤️

  • WooHoo….See’s Candy….the BEST!! I was raised on it as most of us California kids were.
Hope the Traveling Archers are having great fun in beautiful Idaho. We head to Yosemite to backpack on the John Muir Trail at the end of the month. We’ll be back in Monterey for the holidays and into the new year so we’ll hope to cross paths then.
Hugs and enjoy all that great Sun Valley fare. xoxoxo

  • I want summer to last forever….the weather, the tomatoes, reading while sitting in the shade of my backyard.

  • Wow Lynn. What a great life you lead living in three beautiful places at will. I love Sun Valley and can just picture you walking around in Ketchum. Your pasta dish and dinner sound amazing. Lucky John! I bet the kids books have some great advice for all of us! Looking forward to our next gathering. Do you head to Madison next to or back here to CV?
    Ciao
